This is one of my favorite recipes and can almost be a meal by itself. A co-worker brought this to an office luncheon one day and was kind enough to share her recipe. It's been a favorite ever since! Here it is . . .
2 cups mozzarella cheese, shredded
1/2 cup parmesan cheese, grated
1/2 cup mayonnaise
1 cup loosely packed basil leaves, chopped (must use fresh, not dried)
4 cloves garlic, chopped
1 pie shell
6 plum tomatoes, cut into wedges
Bake pie shell for 8 minutes at 375 degrees. Remove shell from oven and place 1/2 cup mozzarella cheese on top of the hot shell. Combine 1 1/2 cups of mozzarella, 1/2 cup parmesan cheese, 1/2 cup mayonnaise, 1 cup basil leaves and four cloves of garlic. Spread tomatoes in pie shell, top with cheese mixture. Bake at 375 for 35 - 40 minutes or until golden brown. Serves 6. Yum!
